This is an easy and delicious fall dessert but since it’s also packed with superfoods, it could make a great breakfast too! 

Superfoods you’ll find in this treat include pumpkin, oats and oat flour, spices, dark chocolate and, of course, KAMUT® White Flour!

Much like my Carmel Apple Loaf Cake, this is another one of those treasured recipes I’ve been making for years. It brings back so many memories of baking in the fall! 

This is a simple recipe and, as far as treats go, it’s pretty healthy too so I think it’s a no-brainer this fall and winter!

  • White Sugar
  • Eggs
  • Canned pumpkin
  • Vanilla Extract
  • Dark Chocolate Bar

All About Ingredients for Pumpkin Dark Chocolate Oat Bars  

Flour & Oat Mixture

The mixture of KAMUT® White Flour, oat flour and oats is the perfect compliment to the pumpkin and dark chocolate in this recipe. The oat flour gives a little more density, the oats give a little texture and the KAMUT® White Flour brings balance and more nutrition! If you do not have KAMUT® White Flour, you can substitute your favorite all-purpose flour. I always write my recipes for both so we can all bake together! Canned Pumpkin

For this recipe, make sure you use canned pumpkin puree and not pumpkin pie filling because you will add your own flavors and sweetener.

Pumpkin Pie Spice

Pumpkin by itself has a very mild flavor so to get the pumpkin flavor we all associate with fall, you also need a pumpkin spice blend in this and most pumpkin desert recipes. Use your favorite or make your own! 

Butter

The recipe calls for unsalted butter but if you only have salted butter on hand, just omit the added salt.

Dark Chocolate

Any favorite dark chocolate bar will do or substitute dark chocolate chips. Find something around 3.5 oz or use 3.5 oz of chips. This is not a finicky recipe so a little more or less should not have much of an impact on the final product.

How to Make Pumpkin Dark Chocolate Oat Bars  

Preheat oven to 350 degrees and line a 8×8” baking dish with parchment paper. Crumpling the paper and then flattening out can make it easier to get the paper to stay in place.

Melt butter and set aside to cool. Chop dark chocolate and set aside.

In a medium mixing bowl, combine all dry ingredients including flour, oat flour, oats, pumpkin pie spice, baking soda and salt. Set aside.

Combine egg, pumpkin and vanilla in another medium mixing bowl. Set aside.

Mix melted butter and sugar together in a small mixing bowl. Add 1 cup to the dry ingredients and mix until combined then press into the bottom of the baking dish. 

Add the rest of the butter-sugar mixture to the pumpkin mixture, stir in the dark chocolate and then spread on top of the flour mixture in the baking dish.

Bake for 35-40 minutes until set and edges darken. Transfer dish to a wire rack to cool completely before cutting.

  • ¾ cup rolled oats
  • ¾ cup oat flour
  • ½ cup (77g) KAMUT® White Flour (or 1/2 cup + 2 TBSP all purpose flour)
  • ½ tsp salt
  • 1 ½ tsp pumpkin pie spice
  • ½ tsp baking soda
  • 1 ½ sticks unsalted butter
  • 1 cup brown sugar
  • ½ cup sugar
  • 1 large egg
  • 1/2 cup canned pumpkin
  • 2 tsp vanilla

Instructions
 

  • Preheat oven to 350 degrees and line a 8×8” baking dish with parchment paper.
  • Melt butter and set aside to cool. Chop dark chocolate and set aside.
  • In a medium mixing bowl, combine all dry ingredients including flour, oat flour, oats, pumpkin pie spice, baking soda and salt. Set aside.
  • Combine egg, pumpkin and vanilla in another medium mixing bowl. Set aside.
  • Mix melted butter and sugar together in a small mixing bowl. Add 1 cup to the dry ingredients and mix until combined then press into the bottom of the baking dish.
  • Add the rest of the butter-sugar mixture to the pumpkin mixture, stir in the dark chocolate and then spread on top of the flour mixture in the baking dish.
